Ingredients:

  • 8 oz extra-firm tofu, cubed
  • 1 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp Sriracha (adjust to taste)
  • 1 tbsp honey
  • 1 tbsp creamy peanut butter
  • 1 tbsp sesame oil
  • 2 cups cooked noodles (ramen, udon, or rice noodles)
  • 1/2 cup chopped broccoli florets
  • 1/4 cup chopped red bell pepper
  • Green onions, chopped, for garnish

Instructions:

  1. Heat oil in a pan over medium heat. Add tofu and cook until golden brown on all sides.
  2. In a bowl, whisk together soy sauce, rice vinegar, Sriracha, honey, peanut butter, and sesame oil.
  3. Add the noodles, broccoli, and red pepper to the pan with the tofu. Pour in the sauce and toss to coat everything evenly.
  4. Continue cooking for 3-4 minutes until the broccoli is tender-crisp.
  5. Serve immediately, garnished with chopped green onions.
